Viktor Petersson 65b122cbaf chore(deps): bump grouped Dependabot updates and refresh uv.lock (#3064 )

Consolidates 6 Dependabot PRs into one grouped update and regenerates
uv.lock (which the per-PR Dependabot runs left untouched, editing only
pyproject.toml).

Python (dev/build tooling + type stubs + minor runtime libs):
- pytest-cov 6.0.0 -> 7.1.0 (dev)
- click 8.1.7 -> 8.4.1 (docker-image-builder, local)
- sh 2.2.2 -> 2.3.0 (server, viewer)
