Ettore Di Giacinto a530d65c7c fix(ci): compare toolchain series, not patch releases, in the fixture identity ...

The shared production fixtures were refused when the producer and a
consumer job ran on runners with different patch releases of Go (1.26.9
and 1.26.10). A patch release builds and runs the same fixtures, so the
identity now keeps the Go minor and the Node major. protoc stays exact.
