James Rich c5c8494c9f chore: remove deprecated mesh_service_example module ...

The mesh_service_example module was a legacy sample app for core:api
service integration that had been marked deprecated. Remove it entirely
along with all CI tasks, codecov config, version catalog entry
(material-icons-extended), path filters, and documentation references.

core:api itself is unaffected and continues to be published for
external consumers (e.g. ATAK plugins).
