docs: document that remote names are not converted to valid env var names - fixes #8668

When a remote is configured with RCLONE_CONFIG_<NAME>_<OPTION> the remote
name is only converted to uppercase, so characters such as "-" and "." are
not changed to "_" and may not be settable in some shells.

Explain this in the environment variables section and link to it from
"Valid remote names".
